Hydrofoils: Why not scoot on skis, why do they use cross wings?
Isn't it odd that hydrofoils are gliding on T-shaped cross wings that protrude down to the water surface like table legs? That must vibrate so much! Why don't they use skis? Wouldn't that be much smoother, and more willing in terms of lifting up and getting into foiling mode?
Or is the problem in the handling, and something on two skis would fall over when doing a turn in the water?
I really would like to find an answer to this, because I am about to build myself a boat on two long skis, and I'd like to know if this is going to be to my detriment.

Like often in boat building several construction types emerged from personal experience of the builders - and even now not only computer design. So the state of the art is T-shaped wings which provide most comfort but require continuous adjustment.
"Modern hydrofoils use T-shape foils which are fully submerged. Fully submerged hydrofoils are less subjected to the effects of wave action, and are therefore more stable at sea and are more comfortable for the crew and passengers. This type of configuration, however, is not self-stabilizing. The angle of attack on the hydrofoils needs to be adjusted continuously in accordance to the changing conditions, a control process that is performed by computers. Failure to make the proper adjustments will result in the foilborne hull dropping violently back into the sea." (from english Wiki)
On smaller boats for non-commercial purposes skies might work as well but I would expect some disadvantages in navigation. What makes me expect that? Exactly your conjecture: e.g. on snow nobody is going stiff upright around turns. A boat might not necessarily capsize (depending on speed and turn angle) if the skies are not too close to each other and are maybe tilted to a certain amount - have fun figuring out wich tilt angle and shape of the skies are best. It sounds like an academic research project. If it comes to that and you'll need assistance, think of a boat-loving hydrologist
